The history of the Kraków bagel begins in the Middle Ages. The first written mentions of this unique baked good come from 1394. Records from the Kraków bakers' guild mention a special ring-shaped bread that only local bakers with the proper privileges could bake.

Even then, the bagel was a special product. It was mainly baked for important occasions and holidays, and was often given as a symbolic gift. Over the years, it became a daily treat for Kraków’s residents and an inseparable part of the city’s landscape.

Why is the bagel called a bagel?

The name "obwarzanek" comes from the characteristic way it is prepared. Before going into the oven, the dough rings are briefly boiled in hot water. Only then are they baked, which gives them a crispy crust and a soft, springy interior.

It is this method that makes the bagel stand out among other types of bread.

Kraków bagel – a product protected in the European Union

In 2010, the Kraków bagel was added to the list of regional products of the European Union as a Protected Geographical Indication (PGI). This means that the true bagel can only be produced in Kraków and selected nearby towns.

Only a few ingredients are used to prepare it:

  • wheat flour

  • water

  • yeast

  • salt

  • sugar

Bagels are most often sprinkled with poppy seeds, sesame seeds, or salt, though other variants can also be found.
